Who would have thought Rufus Wainwright could be so demanding? The singer has an easy-going personality onstage, but behind it he doesn’t hold back when it comes to what he doesn’t want: No bread, no pasta, no red meat, no sugar, no dairy (including no butter or sour cream), no nuts, no plastic cutlery, no chocolate, no Evian water, not even any alcohol, his rider stipulates. “Rufus is on a strict dietary plan,” it explains, “so please pay full attention to all food requests,” adding that fish is to be grilled “in olive oil (not butter),” salads require “dressing on the side and NO cheese” and “ALL eggs and chicken to be free range.” That’s a man who knows what he doesn’t want!
